Cinnamon Apple Cupcakes! - by Neo Sook Bee

 
Here is the easy recipe for the cinnamon lovers:

Apple Cinnamon Cupcakes (yield 7 cupcakes)


Ingredients:
125g unsalted butter ( I used 100g )
125g brown sugar ( I used 95g )
2 eggs lightly beaten
125 self-raising flour + 1tbsp for sifting over apples ( I used same amount of cake flour plus baking powder and baking soda )
2 tsp ground cinnamon
2 apples (one of them cored and lightly chopped, the other cored and thinly sliced)

Glaze
2 tbsp apricot glaze
1 tbsp hot water

1. Preheat oven 180 degree Celsius. Line muffin tray with cupcake liners.
2. Cream butter in an electric mixer for a few mins. Gradually add brown sugar continue to beat until well combined.
3. Add eggs and beat until mixture is well blended, light and fluffy.
4. Add flour and cinnamon. Continue to beat until well mixed. Stop immediately once all the flour has been mixed well into the batter.
Sift 1 tbsp flour over apples. Using spatula, fold chopped apples into batter.
6. Spoon batter into cupcake liners three-quarters full. Arrange 2-3 apple slices on top. Bake for 20-25 mins. Remove from oven and let cupcakes sit in muffin tray for 5 mins.
7. Remove cupcakes from tray and place on a wire rack to cool.
8. Meanwhile, prepare glaze. Use a brush to mix apricot glaze with hot water until they combine and mixture is of spreadable consistency. While cupcakes are still warm, spread a thin layer of apricot glaze on top.

Note: To prevent sliced apples from browning, soak in lightly salted water for about 5 mins and dry on paper napkins before using.
