Fruit Tarts Recipe 
( can make about 30 mid size tarts)

Ingredients
A) Tart Shells
125g Salted Butter
60g Icing Sugar – sifted
1 egg
1tsp vanilla extract
210g plain flour

Method:
1) Mix butter and icing sugar till smooth – I used spatula and by hand.
2) Add egg and vanilla extract
3) Using a hand mixer, beat till smooth consistency.
4) Fold in flour gradually till the ingredients are combined. If the dough is sticky, add 1 tsp of flour at a time to the mixture.
5) Wrap the dough in a plastic wrap and chill in the fridge for about 15mins
6) Remove from fridge and use tart moulds to shape the shells
7) Bake in oven about 150C for 15 mins till brown.
8) Remove from oven and cool completely.


B) Pastry Cream Filling

400ml Milk
1 tsp vanilla extract
100g sugar
2 tbsp cake flour
2 tbsp corn starch
100ml whipping cream
½ tsp sugar
4 egg yolks

Method:
1) Bring milk to a boil on medium heat. Set aside
2) In another bowl, mix egg yolks and sugar till sugar dissolves. Add cake flour and corn starch. Combine.
3) Add the cooled milk mixture to the egg yolk mixture and stir till combined.
4) In a separate bowl, beat whipping cream till stiff peaks.

5) Fold the whipping cream mixture into the custard mixture.
6) Set aside.

Sugar Glace Syrup
100 ml Apple Juice
½ cup water
1 tbsp cornstarch
¼ cup sugar

Method:
1) Place all the ingredients into a pot and stir till thicken.
2) Cool

Cut fruits of your choice.
Soak the fruits in the sugar glace syrup for about 3 mins. Drain
Pipe the custard into the tart shells and decorate with your fruits!
